Collection description

Since the 20st century, globalization has been considered the main factor contributing to the homogenization of consumption habits, particularly cultural globalization has revolutionized diets around the world. Additionally, the forces of advertising, consumer capitalism, and broad global institutionalization that shaped the postmodern age significantly revolutionized how consumers perceived food and made their decision. As a result, fish consumption gained prominence as a major source of human nutrition. In the current thesis, the main goal is to study consumers’ fish preferences to help producers, and policy makers in implementing new strategies that deter frauds, educate and increase consumer confidence regarding their food choice. The current research is holistic, and each and every component helps to provide a more comprehensive understanding on the subject. The first step to have a complete view about the most recent state of the art identified by the literature. Then, the second step was to explore consumer preferences, and the major attributes guiding their decision-making process within four Mediterranean countries (Italy, Spain, Tunisia, and Lebanon). Thirdly, an empirical study aiming to identify the confront the findings form the previous steps of fish on a representative sample of Spanish and Italian consumers and identify consumer typologies within every population was conducted. Lastly, the fourth study explored emergent food trends, with a specific focus on sushi consumption among a representative sample of Italian consumers. The primary objective is to investigate the key drivers that lead consumers to eat sushi, as well as the role of traceability in determining the frequency of sushi consumption. The research approach is grounded in scientific principles and employs rigorous methodology to ensure the validity and reliability of the findings. A series of conclusions and implications were drawn from this work, mainly rethinking the labelling of fisheries goods could be a successful tactic so that the general public receives balanced information on nutritional value, fishing zone, and fishing management. Then, fisheries stakeholders could design a development path in which origin, traceability, fishing management, and species specific health values (targeted for specific micronutrient deficiencies) could represent main pillars.
