Abstract
In the ever-changing landscape of sustainable practices, exploring alternative uses for waste from the agri-food supply chain has become a focal point for researchers and innovators. The paradigm of the circular economy fits into this context as a key reading in converting the linear and consumerist approach of resources to a more circular model, in which waste is minimized and materials reused or recycled. Researchers and innovators are increasingly attracted to the prospect of transforming what was once considered a simple by-product into valuable resources. It is this fresh perspective that inspired the development of the following doctoral project, embarked upon as a sustainability journey by elevating the role of Coffee Silverskin (CS) – a thin protective layer of the coffee bean that detaches from it during the roasting phase and is often considered a waste material. The thesis delves into the characterization and potential utilizations of Coffee Silverskin (CS) across various sectors, highlighting its versatile applications in nutrition, nutraceuticals, and industrial settings. It aims to identify potential (re)uses for CS, emphasizing its value in sustainable practices and resource management. In the food sector, the research includes a thorough assessment of CS's nutritional profile, particularly its high fiber content, and conducts risk assessments to ensure its safety as a food ingredient. This aspect of the study is crucial in understanding how CS can be incorporated into functional foods and dietary products. Sustainable waste management is another focus, with the exploration of using black soldier fly larvae (BSFL) for the bioconversion of CS. This innovative approach not only reduces waste but also yields high-protein insect biomass, showcasing the potential of CS in circular economy practices. Introducing an innovative mechano-chemical process, the thesis explores the transformation of CS into thin bio-coatings for flexible packaging solutions. These coatings offer a sustainable alternative to conventional materials, contributing to waste reduction in the packaging industry. Furthermore, the research investigates CS as a bio-based coating material for textiles, aiming to address environmental challenges in the textile sector. By exploring CS's potential in textile applications, such as replacing leather and synthetic materials, the thesis contributes to the development of a more eco-friendly and sustainable fashion industry. In conclusion, this sustainable journey of the Coffee Silverskin not only emphasizes the importance of reusing agricultural waste by opening new possibilities for collaboration between different sectors but also reveals the different and emerging roles that CS can play in shaping a more conscious future for both the environment and resources.
