Abstract
Analytical methods for the determination of Endocrine Disrupting Chemicals, heavy metals, microcystins in different food and food supplements were developed and validated. The analytical techniques used were liquid chromatography coupled to tandem mass spectrometry and high-resolution mass spectrometry, inductively coupled plasma mass spectrometry and direct mercury analysis. Afterwards, the methods were employed to determine the contamination levels of these compounds in several commodities, food supplements and in the production cycle of the buffalo milk. In conclusion, the most relevant contamination data were used to evaluate the health risk for the consumers due to the intake of the analyzed products using the RACE system developed by EFSA.
