Abstract

The thesis tackles the transition to a Circular Economy model of the olive oil supply chain in Italy's southern regions. Different aspects of the supply chain have been taken into consideration with particular emphasis on farmer-producer and consumers/consumption sides. The main contribution of the thesis is to provide viable guidelines for stakeholders and policy-makers on how to proceed in the transition towards a Circular Economy model for the olive oil supply chain. To illustrate, the olive grower's drivers and barriers to sustainable innovation were studied, specifically regarding farmers' behavioral aspects and, in collaboration with other research groups from different EU universities, farmers' risk aversion. An estimate of the olive growers' risk aversion and the evaluation of two behavioral models, namely Expected utility theory and Cumulative prospect theory, were the main outcomes of the current work. Moreover, in collaboration with the Social-Ecological Systems Simulation Centre (Aarhus University), an agent-based model was built and implemented in ALMaSS (Animal, Land and Man Simulation System). It regards socio-ecological assessment of agricultural landscapes. The main result is a reliable model of complex dynamics concerning interactions among farmers. Lastly, the consumers' participation in Circular Economy initiatives were addressed. An in-depth study of the effort required to consumers participating in Circular Economy initiatives in the food sector was carried out. Main results are a first “dimensionalization” (or conceptualization) of the consumer effort and the proposition of an index to evaluate the consumer effort's type and magnitude.
